Happy Monday! Are you in the mood for a simple, sweet bread to grab a slice of on your way out the door this week? Then look no further because this Peanut Butter and Jelly loaf should do the trick.
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup peanut butter of choice*
- 2 large eggs
- 1 cup milk
- 1/4 to 1/3 cup jam or jelly of choice
Preheat oven to 350 degrees. In a medium mixing bowl, combine flour, sugar, baking powder, and salt. Add peanut butter, egg, and milk. Stir until just combined.
Pour half of the batter into a greased 8×4″ loaf pan. Drop dollops of jam or jelly into the batter and drag a butter knife through the batter lightly 2-3 times to marble it. Be careful not to do this too many times or else the swirls will lose their definition and the batter will be muddy.
Once you’ve swirled in the jam/jelly, pour the remaining batter on top. Bake for 50-60 minutes – or until a toothpick inserted into the center comes out clean. Cool on a wire rack. Serve with a tall glass of milk and additional jelly/jam, if desired.
*This is just a hunch, but I imagine that reduced-fat peanut butter would produce a really dry loaf. Unless you want to feel like you’re chewing on a peanut-butter flavored brick, then I would steer clear of it for this recipe.
