These moist peanut butter blondies disappear quickly in my house. Thankfully, they are easy to make and combine ingredients that most peanut butter lovers should have lying around.
- 1/2 cup butter
- 1/4 cup peanut butter
- 1 cup light brown sugar, packed
- 1 large egg, beaten
- 2 teaspoons vanilla extract
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/3 cup jelly or jam of choice
- 1/3 cup peanut butter (optional)
Preheat oven to 350 degrees. Melt the butter and 1/4 cup peanut butter in a saucepan over very low heat. Once melted, remove from the heat and let cool to room temperature.
Once cooled, transfer the butter mixture to a medium-sized bowl. Add the brown sugar, egg, and vanilla; stir to combine. Add the flour and salt, stirring until just combined.
Spray an 8×8″ pan with nonstick cooking spray. Pour batter into the pan, smoothing it lightly with a rubber spatula.
Dollop your jelly or jam of choice on top of the batter, – I chose to use this fresh strawberry jam since I had plenty on hand. You can either spread the jam on top of the batter to give the blondies a uniform appearance or marble the jam (and optional peanut butter) by lightly dragging a knife through the batter in a zig-zag pattern.
Bake for 25 minutes , or until the edges begin to pull away from the sides of the pan and a toothpick inserted in the center comes out clean. The edges should be golden and the center should be set. Just be careful not to over-bake or the center will be dry and chewy.
